Ingredients
2 c large flake oats
1 c raisin
1/4 c sunflower seeds
1/2 c sesame seeds
1/2 c chopped almonds
1/2 c ground flaxseed
1 T cinnamon
2 t grated orange zest
1/2 t salt
1 ea egg white
1 T vegetable oil
1 T honey
2 t frozen orange juice concentrate
1 t vanilla extract

Directions
*There are so many uses for this granola beyond serving it for breakfast with skim milk or low-fat yogurt; sprinkle it on fruit salad or low-fat, no-sugar ice cream, or eat a couple of handfuls as a snack.

1. Preheat oven to 350F.

2. In large bowl, mix together oats, raisins, sunflower seeds, sesame seeds, almonds, flaxseed, cinnamon, orange zest and salt.

3. In small bowl, whisk together egg white, oil, honey, orange juice concentrate and vanilla. Pour into oat mixture and toss until thoroughly coated. Turn out onto parchment paper-lined baking sheet and spread evenly. Bake, turning mixture once with spatula halfway through, for 25 to 30 minutes or until mixture is golden brown.

4. Store in airtight container at room temperature up to 2 days or freeze up to 1 month.

Makes about 6 cups.
