Ingredients
8 ea boneless, skinless chicken thighs
1/2 c chicken broth
1/4 c peanut butter
1/4 c soy sauce
2 T chopped cilantro
2 T lime juice
1 ea seeded and chopped jalapeno pepper
2 t minced ginger root
1/4 c chopped peanuts

Directions
1. Place chicken thighs in slow cooker. In a bowl, combine stock, peanut butter, soya sauce, cilantro, lime juice, jalapeno, and ginger. Mix well and pour over chicken.

2. Cover and cook on low x 6 hours. Serve over rice, garnished with nuts and fresh cilantro.
