1. With a sharp knife, score the top and bottom of the pork tenderloin 1/4 inch deep on 1 inch diagonals across the piece. 2. In a large skillet, sear pork tenderloin over high heat on all sides until dark golden brown. 3. Reduce heat to medium, add onion, red pepper, and apple. Continue to cook for 3 minutes. 4. Add white wine, cover, reduce heat to medium-low, and continue to cook for 5 minutes. 5. Turn pork, and drizzle maple syrup over top of pork, recover and continue to cook 5-10 minutes or until pork is cooked through. 6. Remove pork and slice into 1/2 inch medallions and arrange on a deep plate. 7. Return pan to high heat, boil and reduce sauce until thickened and caramelized. 8. Drizzle sauce over pork and serve
